The RESULTS ARE TABULATED & the “NAME THIS DISH CONTEST” was separated by 1 VOTE between FB Posts, Blog Comments, & Emails!!! CRAZY!! CONGRATULATIONS to BOTH Michell Rice Palmer & Laine Leshock… Who were VOTED WINNERS & INSPIRATION to the NAMING OF THIS DISH!!!

Michelle Entered, “Chicken in a Blanket” & Laine’s was, “Pocket Full of Sunshine.”

That said, considering HOW CLOSE the Tally ended… From my perspective, I thought it made sense to THANK BOTH Michelle & Laine by taking 2 FANTASTIC INGREDIENTS & mixing them TOGETHER to MAKE something DELICIOUS???!!

So, this dish will be titled,”Chicken Sunshine in a Breakfast Blanket.” 

I absoultely ENJOYED the FUN Contest Today & I LOVE that 2 VERY SPECIAL contributors to A Bachelor & His Grill get recognized for the naming of this Breakfast Heaven.

Now check this Recipe & Keep thoses taters peeled for the NEXT “NAME THIS DISH” Contest!! :)

p.s. All hanging chads have been accounted for.

INGREDIENTS:
-1/2 Cup Whole Wheat Flour

-1/2 Cup Old Fashioned Whole-Grain Oatmeal
-1/2 Cup Skim Milk
-1/2 Cup Water

-1 Whole Egg
-1 Tbspn Vanilla Extract
-1 Tbspn Sugar
-1 Tspn Oil
-1/2 Tspn Baking Powder
-1/2 Tspn Cinnamon
-1 Pinch Nutmeg / Salt

METHOD to the MADNESS:
-Begin by Mixing Dry Oatmeal & Water… Cooking until Grains are TENDER.

-Mix Oatmeal w/ other DRY ingredients in one bowl & all WET ingredients in another.

-Slowly mix wet ingredients into dry ingredients, ensuring well distributed, but slightly lumpy.
-Let Pancake Ingredients rest for a moment while your attention turns to frying the Egg.
-Place Egg in Fry Pan & Cook until whites are no longer transparent, BUT do NOT OVERcook the Egg. 
-Once Egg cooked, set aside.
-Pour Pancake Batter over a warm Pan.
-Cover Pan to maintain heat / moisture consistency & cook for 1-2min.
-Lay Egg over cooking Pancake Batter & then apply additional Batter over the Egg, covering COMPLETELY.
-Cook on side 1 until the edges slightly brown & small bubbles appear in Pancake Batter.
-GENTLY Flip cake & cook for 2-3min on side 2.
-Remove from HEAT & Prepare to plate.

Please note… DO NOT use the spatula to PRESS DOWN on the cake… ONLY use the spatula for flipping & removing the cake in/from the pan. Let the ingredients work their magic, rise & fluff NATURALLY.

NOW… SERVE HOT OFF THE PAN & DIG INTO THIS BREAKFAST HEAVEN!!!
