-4 LARGE Bell Peppers
-Tomato Sauce (Ingredient List & Method to the Madness, BELOW)
-3/4lb Ground Pork
-1/4lb Ground Spicy Italian Sausage
-1 Whole Egg (lightly beaten)
-1 Cup Whole Wheat Rotini (dry)
-1 Cups Mozzarella (shredded)
-1 Cup Smoked Cheddar (shredded)
-2 Cups Water-2-3 Tbspns Whole Wheat Flour
-8oz Mushroom (pictured: Shitake Mushroom)
-1/2 Cup Skim Ricotta Cheese
-1/8 Cup Extra Virgin Olive Oil
-1 Clove Garlic (finely sliced)
-1/4 Onion (finely chopped)
-1/4 Tspn Rosemary / Thyme / Basil / Parsley
-Salt Pepper to Taste
-Grated Parmesan / Asiago for Garnish
METHOD to the MADNESS:
-Pre-Heat Oven to 375 Degrees.
-Begin by Preparing el Bachelor’s Tomato Sauce (noted below) or Sub less desirable pre-made Tomato Sauce (saves time / cuts flavor).
-Bring 2 Cups Water / 1 Cup Dry Rotini to Boil & Cook to al dente (drain, cover, & set aside).
-In a LARGE Mixing Bowl, Combine THOROUGHLY Pork, Sausage, Ricotta, Egg, Flour, Spices, & Salt/Pepper. Set aside to rest.
-Over medium heat, lay down a LARGE Sauce Pan & pour in Olive Oil.
-After a breif moment of heating Oil, drop in Onion/Garlic, & sautee for 3-4 Minutes.
-From LARGE Bowl Stir Meat Mixture into Onion/Garlic, Cook PARTIALLY (4-5 Minutes, MAX), & then remove from Heat.
-Slice 1/4 Inch off the top of each BELL PEPPER.
-STUFF in ANY Order you Like… Just make SURE to get ALL Ingredients (Rotini, Sauce, Meat Mixture, Mushroom, Cheeses) INSIDE THE PEPPER!!
-Place Stuffed Peppers in a Baking Dish, Cover & Cook for 30Minutes.
-Revmove from Oven & Allow to rest for 7-10minutes, COVERED.
-Slice Peppers in Half to Plate & Garnish w/ Additional Spices, Fresh Leaves of Basil, Shredded Parmeasan / Asiago, a Bottle of Cabernet.
el Bachelor’s ORIGINAL TOMATO SAUCE INGREDIENTS:-3oz Tomato Paste
-1 Medium Tomatoes (diced)
-2 Cloves Garlic (peeled/petitely diced)
-1/4 Medium Onion (peeled/petitely diced)
-1/4 Red Bell Pepper (finely chopped)
-2 Portenne Mushrooms (rough chopped)
-1/4 Cup Olive Oil
-1/8 Cup Red Wine (semi-dry)
-1 Tbspns Sugar
-1/4 Tspn Fresh Leaves of Basil, Thyme, Oregano, and Rosemary (chopped)
-Salt/Cracked Black Pepper & Crushed Red Pepper to Taste
SAUCE METHOD to the MADNESS:
-In warm Sauce Pan pour Olive Oil… Allow to simmer for a moment & Add Onion / Garlic.
-Sautee Onion / Garlic for 3-5min, or until Both are GOLDEN Brown in color (stiring occasionally).
-Continuing to stir, mixing in Mushroom and Cook until Mushroom is TENDER.
-Add Tomato Paste & Diced Tomato into Pan, Stirring Ingredients THOROUGHLY.
-Finally, combine remaining Spices, Sugar, & Wine into the Sauce… Stiring regularly for an additional 3-5 minutes, or until desired level of consistency is reached.
