INGREDIENTS:
-1 1/2 Cups Whole Wheat Flour
-1 1/4 Cups Old Fashioned Rolled Oats (dry)
-1 Cup Butter (melted to room temperature)
-1 Cup White Chocolate Chips / Chunks
-3/4 Cup Lite Brown Sugar
-1/2 Cup Flax Seed Meal
-1/2 Cup Roasted Almonds
-1 Egg + 1 Egg White
-8 Ounces Fresh Blueberries
-3 Tbspns Whole Sunflower Seeds (shelled)
-2 Tbspns Vanilla Extract
-1 Tbspn Cinnamon
-1 Tspn Baking Soda
-1/2 Tspn Salt
-1 Pinch Nutmeg
METHOD to the MADNESS:
-Lightly grease 2 Baking Sheets (or line w/ Parchment Paper) & Pre-Heat Oven to 350 Degrees.
-In Large Bowl, Beat together Butter, Egg, Sugar, Cinnamon/Nutmeg, Salt, Vanilla, & Baking soda until “Fluffy.”
-In Separate Bowl, Mix Flour, Oats, Flax, Almonds, Seeds, Blueberries, & CHOCOLATE!
-Gradually fold Dry Ingredients into Butter/Egg Mixture.
-Once Mixed THOROUGHLY, Cover, & Set aside for 15-20minutes allowing Oats to Soften.
-Scoop Tablespoon-Sized Balls of Cookie Dough.
-Place on Baking Sheet, offering 3-4″ of spacing between Balls.
-Compress tops of Cookie Dough Balls Gently.
-Bake for 10-12 Minutes, or until the Cookies turn Golden Brown in Color.
-Pull from Oven & Cool on the Baking Sheet for 10-15 Minutes.
-Serve while Warm!! ENJOY!
