-1 Cup Steel-Cut Oatmeal (sub: Rolled Old Fashioned Oats)
-2 Cups Water (if subbing Old Fashioned Oats – 1 Cup Water)
-1/2 Cup Smoked Gouda (finely grated)
-6-8oz Crimini Mushrooms
-3-5 Whole Sprigs Fresh Thyme + 2-3 Sprigs of Fresh Thyme Leaves (garnish)
-2 Cloves Garlic (minced)
-1/2 Medium Onion (finely sliced – 1/8″-1/4″)
-Flaky Sea Salt / Cracked Black Pepper to Taste
-2 Tablespoons Olive Oil + Additional to Taste
METHOD to the MADNESS:
-Bring Pot of Water to RAGING BOIL, pour in Oatmeal, Reduce Heat to a Simma, & Cover.
-Cook Oatmeal for 25-30 Minutes, or until Oats have reached Desired Tenderness.
-While Oats Cooking – Prepare Mushrooms, Onion, Garlic, & Thyme on Cutting Board.
-In Sauce Pan over Medium Heat, pour 2Tbspn Olive OIl & Bring to a Gentle Simmer.
-Add Onion/Garlic & Saute for 3-5 Minutes.
-Add Mushroom/Thyme & Saute ALL until Mushroom turns Golden Brown (~5-7 Min).
*NOTE: If liquid dries too soon… Add 1 Tspn at a time of Olive Oil.
-When Veggies Appropriately Sauteed… Pull from Heat & Remove Sprigs of Thyme.
-When Oatmeal finishes Cooking, Remove from Heat, & Fold in Gouda.
-Scoop Cheesy Oatmeal into Sauce Pan with Sauteed Veggies.
-Mix ALL Ingredients Thoroughly.
-Spoon Oatmeal Mixture into Serving Bowl.
-Add Additional Olive Oil & Season with Salt/Pepper, BOTH to Taste.
-Garnish with Fresh Thyme Leaves.
