-2 Cups Whole Milk
-1/2 Cup Sugar
-4 t Corn Starch
-3 Egg Yolks
-3oz Semi-Sweet Chocolate Chips/Chunks (Pudding)
-3oz Dark Chocolate Chips/Chunks (Pudding)
-2oz Dark Chocolate Chips/Chunks (Optional Topping)
-2 t Vanilla Extract
-2 Pinches Salt
METHOD to the MADNESS:
-In a Large Mixing bowl whisk Sugar, Vanilla, Yolks, & Corn Starch.
-In a Sauce Pan over Medium Heat combine Milk, 3oz Semi-Sweet/DARK Chocolate, & Salt… Stir until Chocolate Melted.
-Pour HOT Chocolate over Sugar/Yolk/Starch Mixture, whisking until thoroughly combined.
-Empty Pudding Mixture back into Sauce Pan & Place back over Medium Heat.
-Stir Constantly through Boil.
-At Point of Boil, Reduce Heat to Simmer.
-Continue Stirring for an additional 3-5 Minutes while simmering, or until Pudding Mixture Thickens.
-Pull from Heat, Pour into Large Bowl, Cover with Plastic Wrap, & Refrigerate for 4hrs, or until Completely Set.
-Remove from Refrigerator, Serve in Individual Bowls & Garnish with… MORE CHOCOLATE!!
