INGREDIENTS:
-1 3/4 Cups Buttermilk (divided)
-1 Cup Whole-Wheat Flour
-1/2 Cup Sweet Cherries (pitted / rough chopped)
-1/2 Cup Oatmeal (dry)
-1/4 Cup Coconut (finely shaved or shredded)
-1/4 Cup Quinoa (cooked)-1 Egg (beaten)
-2 T Butter (room temperature)
-1 1/2 T Lite Brown Sugar
-1 1/2 t Baking Powder
-3/4 t Baking Soda
-1/2 t Cinnamon
-1/8 t Nutmeg
-2 Pinches Salt
METHOD to the MADNESS:
-Cook Quinoa (Red Inca Quinoa Shown. 1:2 – Quinoa:Water. Bring to Boil. Simmer Covered for ~25min).
-Pull Quinoa from HEAT, Remain Covered, & Let Cool.
-While Quinoa Cooks/Cools… Soak Oats in Buttermilk for 15min.
-In Large Bowl, mix THOROUGHLY Dry Ingredients: Flour, Baking Powder/soda, Cinnamon/Nutmeg, & Salt.
-In Separate Large Bowl mix THOROUGHLY Wet Ingredients: Eggs, Butter, Sugar, Oatmeal Mixture, & Quinoa.
-Slowly fold Wet Ingredient into Dry.
-Pour in Coconut & Cherries into Pancake Batter & Evenly distribute.
-In Lightly Oiled Griddle or Fry Pan, Over Medium Heat, pour 1/3 Cup of Batter.
-Cook Side1 until golden brown in color & small bubbles rise in middle of Pancake.
-Flip with Spatula & cook Side2 for 60-90 Seconds.
-Serve Hot, Topped with a lite drizzling of Honey/Maple Syrup, & Sided by Fresh Cherries.
-Repeat process, cleaning pan/griddle & applying additional oil between pancakes.
