INGREDIENTS:
-3 Large SWEET Potatoes
-2 T Olive Oil
-1 Dash Lite Brown Sugar
-1 Dusting Ground Cinnamon
-1 Pinch Ground Nutmeg
-1 Scintilla Lime Zest, Finely Grated
-1 Smidgen Cayenne
-Coarse Salt / Cracked Black Peppercorn, to Taste
-Chopped Cilantro & Additional Seasonings, to Garnish
METHOD to the MADNESS:
-Pre-Heat Oven to 375ºF & Grill to HOT.
-Rinse / Clean Potato & Par-Bake in Oven for ~20-25min, or until JUST Fork-Tender.
*NOTE: Do NOT over-cook or cook through. If still “partially firm” – Its OK, Grill will finish the Job!
-Pull Potato from Oven & let cool.
-Length-wise, cut into 4-6 wedges.
-Gently Toss Wedges in Olive Oil, covering all sides of the Potato (including skin), & Season to Taste.
-Place Potatoes over HOT Grill, cooking until just heated through, exterior caramelized, & sear marks in place.
-Approximate cook time: 2 minutes per side (4-6min total per Wedge), depending on thickness of Slices.
-Pull from Grill, Garnish with Cilantro, & Serve HOT/Crispy!
