Grilled Portobello Pizza

INGREDIENTS:
-4-6 Large Portobello Caps, Rinsed / Stem Removed
-8-12 T Red Wine Tomato Sauce (ORIGINAL Recipe posted below)
-8-10 Heirloom Tomatoes, Sliced
-1 Cups Fresh Mozzarella, Shredded
-1/2 Cup Parmesan, Finely Shredded
-1/4 Cup Asiago, Finely Shredded (garnish)
-4oz Fresh Basil Leaves, Chopped (garnish)
-3 T Olive Oil
-1/2 T Rosemary, Thyme, & Oregano
-Coarse Salt, Granulated Garlic Powder & Cracked Black Peppercorn, to Taste

METHOD to the MADNESS:
-Pre-Heat Grill to Medium/High.
-Prepare Tomato Sauce per Recipe BELOW.
-In Mixing Bowl combine shredded Mozzarella & Parmesan.
-Brush both sides of Portobello with Olive Oil.
-Begin filling Stemmed-side of Portobello with 2T of Tomato Sauce.
-Add Shredded Mozzarella/Parmesan Cheese (to Taste), followed by Sliced Heirloom.
-Lightly season to taste with Rosemary, Thyme, Oregano, & Garlic.
-Place Portobello over HOT Center Grates for 4-6 Minutes, or until Portabello begins to TENDER & Cheese Melts.
-Move Portobello to exterior cooler Grates & Grill for additional 4-5 Minutes.
-Remove from Grill & allow to rest 2-3 Minutes.
-Garnish with Fresh Chopped Basil, Asiago, & Coarse Seasonings.
-Plate, Serve, & Enjoy!!

INGREDIENTS (Fresh Herb & Red Wine Tomato Sauce):
-6oz Tomato Paste
-10-12oz Cherry Tomatoes (diced)
-2-3 Cloves Garlic (peeled/petitely diced)
-1/2 Medium Onion (peeled/petitely diced)
-1/2 Yellow Bell Pepper (finely chopped)
-2-3 Portobello Mushrooms (rough chopped)
-1/4 Cup Olive Oil
-1/4 Cup Red Wine (semi-dry)
-1-2 t Sugar
-1/2 t Fresh Leaves of Basil, Thyme, Oregano, and Rosemary (all chopped)
-Coarse Salt / Cracked Black Pepper & Cayenne to Taste

METHOD to the MADNESS:
-In warm Sauce Pan pour Olive Oil… Allow to simmer for a moment & Add Onion / Garlic.
-Saute Onion / Garlic for 3-5min, or until Both are GOLDEN Brown in color (stirring occasionally).
-Continuing to stir, mixing in Mushroom and Cook until Mushroom is TENDER.
-Add Tomato Paste & Diced Tomato into Pan, Stirring Ingredients THOROUGHLY.
-Finally, combine remaining Spices, Sugar, & Wine into the Sauce… Stirring regularly for an additional 3-5 minutes, or until desired level of consistency is reached.
-Now… You are READY to LOAD UP that Portobello for the GRILL!!
