-4 Haas Avocados, Halved, Seeded, Peeled & Diced
-1/2 Cup Cilantro Leaves, Rough Chopped
-1 Lime, Juiced
-1 t Ground Cumin
-1/2 t Paprika
-1/2 t Kosher Salt
-1/2 t Ground Peppercorn
-4 T Red Onion, Finely Diced
-3 Roma Tomatoes, Seeded & Diced
-2 Jalapeno Peppers, Seeded & Minced
-2 Cloves Garlic, Peeled & Minced
-1/2 Yellow Bell Pepper, Diced
-1/2 Lemon Zest
-1 Splash Olive Oil
METHOD to the MADNESS:
-In Large Mixing Bowl & toss together Onion, Tomatoes, Jalapeno, Garlic, & Bell Pepper.
-Fold in Avocado, Lime Juice & Splash of Olive Oil.
-Dust with Seasonings.
-Mash together all ingredients, leaving Guacamole concoction a bit CHUNKY.
-Finally, add Cilantro/Olive Oil/Lemon Zest & mix Guacamole to desired consistency.
-Refrigerate for 1hr prior to Serving.
-TIP: Cover bowl with Plastic Wrap pressed against top of dip – assisting in maintaining freshness
-TIP2: In effort to maintain freshness & delay browning, place 1 Avocado Seed into the Guacamole Mix.
-Pull from Cooler, Uncover, place in Serving Dish alongside GREAT/FRESH Tortilla Chips & DEVOUR!!
